See Matsuyama Castle and the front of Dogo Onsen Honkan. If you are heading onto the Shimanami Kaido, open the Kurushima Strait camera too; the Matsuyama city views do not show the sea crossing.
You can spend a day around Matsuyama Castle and Dogo Onsen. To ride the Ehime side of the Shimanami Kaido, travel to Imabari and leave time for cycling. If your stay is short, choose which outing matters more rather than squeezing the ride into a city visit.
Look for cherry blossoms around Matsuyama Castle in spring, or citrus and autumn colour later in the year. Peak bloom and foliage dates change, so check local updates before you go.
Ehime serves sea-bream rice in two styles: one with cooked fish and another with slices of raw fish. For the orange-juice tap, look for Orange BAR on the first floor of Matsuyama Airport and check its hours before you go.
