Kamikochi has separate views around Kappa Bridge and the bus terminal. Hakuba’s upper slopes and Matsumoto Castle have their own cameras. For a hike, look at your starting area as well as the higher viewpoint.
Matsumoto Castle is a city visit; Kamikochi involves a bus ride into the mountains. If you want time to walk there, check the bus schedule and opening dates before trying to fit both into one day.
Kamikochi suits a summer walk; Hakuba is a winter snow destination. Visible snow does not tell you that a trail or lift is open.
Shinshu soba makes a meal; oyaki dumplings with different fillings make a snack between walks.
